Not only is she interested but is also extremely impressed. She lent me a panini cookbook and allowed me to “have” a loaf of our signature bread, Milton’s Wheat, to use in a grilled cheese. (Don’t tell anyone though…*wink, wink*) From there, I used my Grilled Cheese, Please cookbook to gain inspiration and create this particular grilled cheese sandwich.

Do you like smoked cheeses? Recently, the sous chef, mr. sous chef and I traveled to the West Side Market, looking for various bargains. Many, many years ago, the fam and a lot shorter version of myself would go. My small size lead me to be scared/intimidated by the the large crowds leading to a freaked out grilledshane. Just picture that for a second…a small, afraid shane. Its funny!

Daiya Vegan Cheddar “Cheese” Grilled Cheese Sandwich Experiment Thanks to the assistance and suggestions of the sous chef and new sous chef jr., I decided this week I would go out on a limb and try dairy-free cheese. When I was deciding on a cheese for my Fried Matzoh w/Horseradish Mayo Grilled Cheese, I saw that Whole Foods had Jasper Hill Cabot Clothbound Cheddar on sale…for $19.99/lb. I was going to use it on my Matzoh sandwich but decided that I would save such an awesomely expensive cheese for a better bread. The cheese was still on sale, so that is what I chose. Quadrello di Bufala & Farmhouse Cheddar Grilled Cheese The Grilled Cheese Kitchen and laundry room were having issues over the weekend, with multiple sinks backing up. Since we weren’t sure when the problem would be fixed, the original plan was to not do a sandwich. Then, sometime Monday, Mr. Plumber came and made the problem go away (for now). With the issue apparently fixed, it was time to decide on a sandwich. I wasn’t prepared with any grand ideas, so I went for simple. I walked around Whole Foods, searching for two different cheeses that I have yet to try. The first cheese I stumbled on was Quadrello di Bufala, which is made from buffalo milk, a first for me. The second is a farmhouse cheddar that I have seen in many stores but never purchased. I am glad I did. Finally, I found a wheat bread to go along with my two cheeses and I was on my way…
